Situated in the San Ignacio Province at 1800 meters, Chirinos shares its name with the community it inhabits. This coffee is goes through a double fermentation process, giving it complex purple fruit notes (plum) and a stunning mouthfeel. Most washed process coffees are only soaked during the fermentation process for 12-24 hours, but more recently farmers have been experimenting with this part of the process in order to produce a more dynamic cup.
